Czech Republic
You Know the Czech Republic for the Beer. Stay for Everything Else.
Three cities, a serious coffee culture, and a Vietnamese food scene hiding in plain sight. This country has been holding out on you.
Most people arrive in the Czech Republic for Prague, spend a few days in Old Town, drink the beer, and leave. That's a fine trip. It's also about a third of what's actually here.
The Czech Republic is a small country that moves at a specific pace: unhurried, proud, unbothered by trends arriving from elsewhere. That quality shows up in the food. It shows up in the coffee, which arrived later than the rest of Europe and landed with the kind of focus that comes from not wanting to waste the opportunity. And it shows up in something most visitors never go looking for: one of the largest Vietnamese communities in Europe, a population that built businesses and restaurants across the country during the communist era and never left. That thread runs through Prague, through Brno, through small cities that don't make the travel magazine covers.
This is a collection built across three cities. Prague for the obvious reasons and the less obvious ones. Brno because it deserves to be on your itinerary and almost never is. Liberec because it's doing something with coffee that the rest of the world hasn't caught onto yet.

Regional Vietnamese spot in Liberec serving scratch-made bún bò huế, glass noodle soups, and street food staples to both local Czech diners and the diaspora community. Sparse, clean space with simple tables and Vietnamese condiments already set out. Egg rolls fried perfectly crisp, and a locally recommended bowl of bún bò huế delivered well-cooked toppings, farmers market pickled vegetables, and a generous side of nước mắm chấm. Set inside a medieval hall in the Týn Courtyard, one of Prague's oldest sites and once a fortified merchants' compound where foreign traders paid customs under royal protection. That trading history is the reason a landlocked city has a serious seafood restaurant, live lobster, fresh oysters, daily catches, anchored by longtime executive chef Petr John through two name changes. Delicious risotto, solid meat-forward Czech options for non-seafood eaters. Old-school service, occasionally brisk. Elegant, romantic, well executed rather than exciting.

Valentinská 52, 110 00 Staré Město, Czechia
Old Town institution named for its proximity to historical political sites, with local lore tying it to 19th-century Czech patriots who used spots like this as covert meeting rooms under Austro-Hungarian rule. No modern reinvention here, just textbook goulash, svíčková, and massive fried schnitzels in a wood-paneled room stuck happily in mid-century Prague. Cheap, loud, and unapologetically Czech, the kind of place built for cheap pilsner and hours with friends.

Národní 364/39, 110 00 Staré Město, Czechia
Housed inside the old State Printing Works of Security, in the exact rooms where Czechoslovak banknotes were printed starting in 1928. Chef David Kalina builds the menu from First-Republic era cookbooks, elevated pub food like tartare, sausages, fried cheese, and slow-roasted pork knees, all paired with properly treated tank Pilsner. Pillowy dumplings in rich sauce cut with tart jam, slow-cooked meats crisped before serving. Warm, modern, unfussy room built for a beer and a big meal with good company.

Built literally over the old watermill channel beside the Charles Bridge, with a view of Prague Castle that does half the work before the food even arrives. Chef Vladimír Vaníček takes Czech classics like duck and dumplings and runs them through French sauces, Japanese shiso, Korean kimchi. Tableside theater, smoked tartare under glass, dry ice on the crème brûlée, earns its keep instead of distracting from serious cooking. No Michelin star yet, but Michelin Selected, and it plays like a star kitchen.

Oldřich Sahajdák opened this in 2006 with a single 1894 cookbook as the entire kitchen's blueprint, on a mission to resurrect Czech and Austro-Hungarian cooking that communism had flattened. In 2012 it became the first traditional Czech restaurant to earn a Michelin star. The tasting menu leans hard on ingredients foraged near Prague, elevated with modern technique. Sober for eleven years, and this is the best non-alcoholic pairing I've ever had, fresh tinctures made from beets, carrots, and leeks that outpaced the wine list next to it. Heavy Hitter.

Started as a rotisserie stall when founder Vojta Václavík's planned pork knuckle menu got vetoed by customers who wanted the chicken instead. They were right. It's the best in Prague: juicy, seasoned, cooked with real precision. Everything here is made from scratch, down to their own fermented miso, kimchi, and hot sauces. The croquettes are crisp-edged and cheese-packed, the pickles come with a rotating lineup of sauces, and the sandwich is a genuine textural achievement. Strong vegetarian and vegan range too. Elevated without the price tag to match. Heavy Hitter.
