
Onesip is named exactly right. Adam and Zdeněk opened it in 2016 on a quiet stretch of Haštalská Street with one idea: strip away everything that isn't the coffee. There's a low counter, a couple of window seats, and not much else. No sprawling brunch menu, no laptop-farm culture spreading across every table. The tiny footprint forces something most cafes have designed out of the experience entirely, direct conversation with the person pulling your shot.
That focus shows up in the sourcing too. The espresso runs through a Kees van der Westen machine, serious hardware for a space this small, and the beans come from top-tier international roasters like the UK's Round Hill alongside Candycane Coffee, a local specialty roastery that Adam and Zdeněk started themselves. They don't roast on site, but the pipeline is entirely their own design, curated rather than outsourced to whatever's convenient.
Prague's coffee identity runs old school and dark roast, and Onesip is a deliberate rebellion against that. This is Nordic-style coffee, nuanced, acidic, berry forward, the kind of cup built to showcase the fruit rather than roast past it. It's my style of coffee, and every cup here hit. Consistency at this level, in a space this small, run by people this hands-on, isn't an accident.
There's a pastry case, a couple of window seats, and a cobblestone street outside that makes the whole thing feel like a discovery even though half of Old Town already knows about it. It doesn't need more than that. This is the best coffee in Old Town Prague, full stop.
