Grilled Spam and Pineapple Pizza

I am not going to apologize for this pizza. Spam is a legitimate ingredient with a real history, particularly across Hawaii and much of Southeast Asia, and anyone who has eaten it properly — sliced thick, grilled hard, caramelized at the edges — knows it holds up. The pineapple gets the same treatment. Both come off the grill smoky and sweet and slightly charred, and that is before they go on the pizza. This is a gut bomb with good intentions.
Use the Neapolitan pizza dough recipe, the gluten-free pizza dough recipe, or store-bought dough. All three work.

2 portions pizza dough (Neapolitan dough recipe, gluten-free dough recipe, or store-bought)
1 can Spam, sliced 1/4 to 1/2 inch thick
1/4 to 1/2 lb fresh pineapple, sliced
1 cup shredded fontina
1/4 cup marinara sauce (your favorite)
Steps
Grill the spam and pineapple
Heat a grill to high. Grill the Spam slices and pineapple for 2 to 3 minutes per side until dark grill marks form and the edges begin to caramelize. Pull from the grill and let cool slightly. Cut both into bite-sized pieces.Stretch the dough
Press each dough ball out from the center using your fingers. Stretch gently outward, rotating as you go. Do not push down on the dough or use a rolling pin. The goal is to preserve the gas bubbles that make the crust puff and stay soft and chewy inside.Top the pizzas
Spread a thin layer of marinara across each stretched base. Scatter the grilled Spam and pineapple pieces evenly over the sauce. Distribute the shredded fontina over the top.Bake
In a pizza oven: cook at maximum heat for 60 to 90 seconds, rotating every 15 to 20 seconds. In a home oven: bake on a preheated stone, cast iron griddle, or upside-down cast iron pan at the highest temperature for 8 to 12 minutes until the crust is golden, the edges push toward burnt, and the cheese is fully melted and beginning to color.
