Two fine-dining chefs got into a pizza argument and built Zarella to settle it. Wisconsin meats, tavern squares, a hidden cocktail taverna, and mozzarella sticks with an unreasonable amount of pull.

The origin story is more honest than most. Chris Pandel and Lee Wolen, two of Boka Restaurant Group's chef-partners, had been arguing about pizza for years. Their combined résumés run through Swift & Sons, Girl & the Goat, Boka, and Eleven Madison Park. Their answer to the argument was to build a restaurant around it. Zarella opened in March 2025 in River North, in the space that used to be GT Fish & Oyster, and it arrives as one of the more convincing entries in Chicago's current tavern-style moment.

The premise is straightforward: a chef-driven Italian-American pizzeria with serious technique applied to food that is supposed to feel effortless. Both things are true simultaneously. The kitchen does not announce its fine-dining background. It just shows up in the execution.

The pizza is the reason to come. Zarella offers two crusts: the paper-thin, square-cut tavern style and a slightly fuller artisan thin crust served in wedges. The tavern squares are very good. The lace holds. The sauce is restrained and doesn't compete with what's on top. The soppressata and mortadella come from Wisconsin, and the sourcing matters in the way sourcing matters when someone is paying attention. The mortadella has spice. The sopressata has the same care. Balanced against a Calabrian chile honey oil that gives every bite a warm, sweet heat that keeps you going back for another square.

The mozzarella sticks need to be ordered. The stretch on them is genuinely absurd, the kind that makes the table stop talking. The pull went further than the full span of outstretched arms. The fry holds, the cheese is soft, and the ratio is right.

Pastas are worth exploring beyond the pizza. The bar program is considerable and thought through, including solid NA options that don't feel like afterthoughts. Gluten-free pizza and pasta are both available, which alongside the NA options makes this one of the more genuinely accommodating menus in the category. The tableside chalkboard presentations of Italian specialties are a small touch that earns its place.

The space operates as several different restaurants depending on where you sit. The main dining area has leather booths, paisley walls, and clustered family photographs — deliberately nostalgic without being kitsch, the Sinatra-era quality calibrated rather than imposed. The barroom has more energy. Then there is a concealed door that leads down to a lower-level cocktail taverna, a private and intimate contrast to the floor above. The right choice depends entirely on why you came.

Zarella is a River North restaurant that does not feel like a River North restaurant is supposed to feel. That is not a small thing.
