Paulie Gee's started in Brooklyn and the Logan Square location is their sit-down restaurant. Rustic design, original tin ceilings, a lot of warm wood, the kind of room that feels like it has been there longer than it has. When the weather cooperates they open the garage door in front and the whole place breathes. Craft cocktails if you drink, good company either way.

The crust is the reason to come. Neapolitan done correctly means the oven runs hot enough that the crust doesn't turn brittle but develops a toothsome chew with a little char at the edges. Paulie Gee's gets this right consistently. The pies are creative without being overstuffed, which is its own kind of discipline. The Hellboy is my order every time. The Ricky Ricotta is excellent and worth trying if you want something on the lighter side. They also do Detroit style if that's the mood, and the Netflix and Chillee is the right call for that format. Honestly the crust style is more about where your head is that day than it is about the toppings. Both are good. Pick your mood.
