Mano Modern Is a Filipino Breakfast Spot That Happens to Serve Coffee
West Town's silog-forward cafe gets the food right and that's enough
The coffee is not the reason to come to Mano Modern. File that away early and the rest of the visit falls into place.
Mano is a Filipino cafe in West Town built around silogs, the classic Filipino breakfast format of garlic rice, egg, and a protein. Spam, chicken adobo, beef mechado, tofu sisig — the proteins rotate and the garlic rice anchors all of it. Rice bowls round out the menu alongside pan de sal sliders, the soft Filipino bread bun that makes everything it touches better. The Pinoy Bang Bang sauce shows up across several items and earns its presence every time.
Allen loves Spam in Asian cooking, which is a completely correct opinion, and the spam silog was exactly what he wanted it to be. The hashbrowns are patties, well fried, and worth grabbing. The lumpia are cheap, well fried, and non-negotiable. These are the moves.
The coffee is serviceable. Not bad, not memorable. If you need caffeine with your breakfast it will handle that job. The specialty Filipino-forward drinks, like the ube matcha, are there if that's your thing. Just don't come here with your expectations organized around what's in the cup.
The space is airy and pretty basic, with the bar up on a platform and a sense of humor running through the whole place. They sell Filipino toys, snacks, and retail items alongside the food, which gives the spot personality without trying too hard. It feels like a neighborhood spot that knows exactly what it is and is comfortable with that.
