Not every Heavy Hitter needs a Michelin star. Some of them just need the best pancakes in the city and a staff that knows your order.

Boulevard Bistro opened in January 2023 when owner Daria Pruska took over the Bucktown space where she had worked for over a decade at the previous tenant, Cornerstone Café. When Cornerstone unexpectedly closed after seventeen years, she did not look for somewhere else to go. She took over the space and opened her own family business. Her husband cooks. Her daughter helps. The regulars followed. That continuity is not a detail — it is the whole story of what this place is.

The space is odd and charming for it. A triangular footprint with counter seats wrapping around a triangular central bar, regulars chatting up the staff on one side and newcomers figuring out where to sit on the other. Nothing about it is special in the design sense. Everything about it is comfortable in the way that your favorite sweatshirt is comfortable. Not fancy. Just exactly right.

The pancakes are the reason to come first and the reason to keep coming back. Fresh, organic ingredients, cooked with actual care, light and fluffy in the way that pancakes are supposed to be and rarely are. And good news for our gluten intolerant friends, this place is very friendly to your needs and you won't be feeling like an afterthought. These are among the best in the city. I will not hedge that. The steak and eggs are strong. The Benedicts hold up across visits. Allen comes back for the biscuits and gravy specifically and has never been disappointed. Across a significant number of visits and every person we have ever brought here, nothing has come back bad. That consistency is harder to achieve than it looks in a kitchen running breakfast and lunch at diner speed.

The drip coffee is a bit harsh, a bit pointy. At Boulevard Bistro I do not care. This is diner food. You should want to put a little cream and sugar in your coffee. This is not a place that tells you about the elevation of the bean or the pour-over process, and it should not be. It is classic in the way that classics earn the word — not by being old but by being exactly what they are supposed to be, every single time.

Weekends bring a short wait. Weekdays are calmer. Either way the tables turn fast and the staff keeps things moving without making you feel rushed. If you are hungover, craving breakfast, or want to put money into a local family business that deserves it, this is the answer.
