Pilsen protects its identity fiercely, and it shows in every direction, building-sized murals telling real history, panaderías that have been open for generations, taquerías that never needed a menu redesign. A newer wave of chef-driven Mexican cooking has moved in around the traditional techniques, not over them. The artist studios and performance venues tucked into old warehouse space keep the whole neighborhood feeling unfinished in the best way.
