A one-man ghost kitchen at The Hatchery in East Garfield Park, run by a Virginia cook who spent three years in Paris kitchens. The fries are the reason to go: pommes Anna sliced paper-thin, pressed, cut, and fried until the outside shatters and the layers inside stay soft. Get them with the house dijon mayo and the buttermilk sandwich, whose house pickles cut straight through the fry. Pickup and delivery only, and it survives the drive.
