Graph Quarter sits just outside the western wall of Old Town and trades the industrial steel of the other locations for something warmer and more approachable. It is a smaller space, friendlier in feeling, and works with local artisans to supply its baked goods rather than sourcing or producing them in house. A different model and a different vibe, but the same coffee standards as the rest of the operation.
If you are staying near the west side of Old Town or finishing a temple walk and want somewhere to land, this is a good answer.
Graph started roasting in 2017, sharing a space with Gateway Coffee before finding its footing and expanding across Chiang Mai. The roasting philosophy skews Norwegian — light, acidic, complex, respecting the cherry rather than burning it into submission. If you prefer your coffee to taste like the fruit it came from rather than the roaster's preferences, Graph is going to make you very happy.
The baristas are well trained across every location and the espresso drinks are consistently good. The pastries are European in style and fine without being remarkable. The coffee is the reason to be here, and it delivers across the board regardless of which location you walk into.
