One Nimman is a newly designed industrial complex in the Nimman area — wandering corridors of local artisans, food stalls, street performers, and boutique shops under one air-conditioned roof. By Thai standards it runs expensive. By American or European standards you will find it entirely reasonable. Graph's express location sits inside, small and focused, with rusted details, low-hanging black light fixtures, and the kind of industrial masculine energy that tells you immediately this is not a casual operation.
They call it the express location for a reason. There is space to sit and have a pastry if you can find it, but this is really a grab and go stop. If your jet lag is still bothering you midday while you shop One Nimman, this is where you fix that. If you can claim a seat, order the pour over. It is worth the wait.
Since One Nimman is air conditioned, you can even sit outside on their window bench and enjoy your coffee in the hot Chiang Mai afternoon.
Graph started roasting in 2017, sharing a space with Gateway Coffee before finding its footing and expanding across Chiang Mai.
