Nine Bays, Almost No Americans, Excellent Mole

Los Parados is the late-night local institution in La Crucecita, and the room is always full for good reason. The tlayudas are hand-grilled over open charcoal one by one, super crispy, layered with asiento and quesillo, and they are the reason to come. Start with the Oaxacan cheese queso, get the mushroom or the chorizo mix-in, and tear into it with fresh masa tortillas. The salsa bar is ready for you. So is the man with the guitar.

Just off the main square in La Crucecita, El Sabor de Oaxaca is doing something the plaza spots aren't bothering with: serious, interior Oaxacan cooking in a coastal beach town. The moles are the story. Deep, rich, thick, and genuinely complex in a way that earns the regional reputation. Tacos are solid. The pork rinds in red sauce are skippable when something this good is on the same menu. Come for the mole. Let everything else be secondary.

Directly on the zócalo in La Crucecita, Delicias Oaxaquenas is doing exactly what a main-square restaurant in a tourist hub is supposed to do: keeping everyone fed and the bar moving. The chapulines guacamole is the reason to sit down. Grasshoppers add a crunch and a toasty salt that earns its place on the chip. The rest of the food is serviceable. The live music makes up for a lot. Then walk outside and find the elote cart. That's not a footnote. That's the plan.
