Pan-Seared Zucchini
One ingredient, four real steps. Scoring before salting is what gets the ridges to char.

This is the side I make when I don't want to think too hard about it, but still want something that looks like I did. One zucchini, a hot pan, and about twenty minutes of mostly waiting.

The score is the step people skip, and it's the one that matters. Cutting into the flesh before salting means the water actually pulls out through more surface area instead of just sitting on top. Then when it hits the hot pan, those cut lines contract into ridges, and that's what turns into real char instead of just browned skin.
Salt it, let it sit, pat it dry. Skipping the dry step means steam instead of a sear, so don't rush past that part.

Three minutes hard in the pan, then a short stint in the oven to soften the center without losing the bite. Twenty minutes total, one pan, one ingredient beyond salt and oil.
I made this one alongside the one-pan chicken and potatoes, same logic: minimal cleanup, real result. It holds up fine on its own too.

2 medium zucchini, halved lengthwise
1 teaspoons kosher salt
1 tablespoons olive oil
Steps
Score the cut side: Score the cut side of each zucchini half 2 medium zucchini, halved lengthwise in a tight cross-hatch pattern, cutting about halfway into the flesh without going through.
Salt and rest: Sprinkle the scored side with 1 teaspoons kosher salt kosher salt and let sit, cut side up, for 20 minutes 20:00 to draw out water.
Pat dry: Pat the cut side completely dry with a paper towel.
Sear hard: Heat 1 tablespoons olive oil olive oil in a cast iron skillet over high heat. Sear cut side down, undisturbed, until deep golden, about 3 minutes.
Finish in the oven: Transfer the skillet to a 425-450°F oven. Cook until the edges soften slightly but the center stays firm, about 7m 30s.
Serve: Serve straight from the skillet, cut side up.
