Some dishes require explanation. This isn't one of them.

Pan-roasted salmon with cumin acorn squash, za'atar yogurt, and a pistachio parsley crumble sounds like it came off a menu at a place that charges too much for natural wine. It didn't. It came off a home stove on a weeknight, start to finish in under 30 minutes, with one pan and a sheet tray.

The za'atar yogurt is the thing. It sounds like a supporting player but it's running the whole operation — cooling against the heat of the salmon, bright against the earthiness of the squash, fatty enough to make everything feel considered. Za'atar is a spice blend built on dried thyme, sumac, sesame, and salt. It is also one of the most underused things in most American home kitchens, and this dish is a reasonable argument for keeping it on the counter permanently.

The cumin on the squash is doing similar work — warm, slightly smoky, grounding. Acorn squash holds up to high heat better than most, caramelizes at the edges, and doesn't turn to mush. It is the right squash for this job.

The pistachio parsley crumble is texture and brightness. Don't skip it. It takes four minutes and it's the difference between a good plate and one that looks like you meant it.

Cook the salmon properly and the rest follows. Hot pan, smoking oil, skin side down, patience. Most people pull salmon too early because they're nervous. Don't be nervous.

Ingredients

  • 2 Salmon fillets (skin on)

  • 2 Tbsp Neutral oil like vegetable or avocado

  • 1 acorn squash

  • Olive oil

  • Salt

  • Ground cumin

  • ¼ cup plain Greek yogurt

  • 2 tbsp olive oil

  • 1 tbsp honey

  • Za'atar (generous)

  • 1/4 cup Roasted pistachios, roughly chopped

  • 1/4 cup Fresh parsley, roughly chopped

  • 1 Lemon - Zest only

Method

Heat oven to 425°F.

Slice acorn squash tip to bottom into half-inch slices. Toss with olive oil, salt, and a generous amount of ground cumin. Spread on a sheet tray and roast 15–20 minutes until browned at the edges.

Heat a heavy pan over medium-high with neutral oil. Let it smoke. You want it genuinely hot. Place salmon skin side down. Do not move it! Sear 3–4 minutes until the skin is crisp and the cook has moved about two-thirds up the fillet. Flip. Sear one minute more, then transfer the pan to the 425°F oven alongside the squash. Pull when just cooked through, about 4–5 minutes depending on thickness.

While everything roasts, whisk together yogurt, olive oil, honey, salt, and za'atar. Taste it. Add more za'atar. Chop pistachios and parsley, zest the lemon, combine.

Let salmon rest two minutes before plating.

Spread yogurt on the plate. Layer squash. Place salmon. Add another spoonful of yogurt. Finish with the pistachio parsley crumble.
