Some dishes earn their place through effort. This one earns it through confidence.

Harissa roasted carrots are not complicated. They are not technical. They do not require a thermometer, a timer, or much attention at all. What they require is a hot oven, good carrots, and the willingness to let things get a little caramelized and rustic and deeply, unapologetically orange.

The rustic part is not a compromise. It's the whole point. Heirloom carrots roasted whole until they're slightly charred at the edges and sticky with honey and harissa look like something that took real thought. They didn't. They took twenty minutes and a sheet pan.

Get heirloom carrots if you can find them. The mix of colors — purple, yellow, orange, white — does visual work that regular carrots can't. Keep them whole unless they're very large, in which case a lengthwise cut is all they need. You want them to look like carrots, not coins.

The slurry is olive oil, harissa, and honey. That's it. Harissa brings heat and depth, honey pulls everything toward caramel as it roasts, olive oil carries both. Use paste if you have it, spice blend if you don't. Single layer on the pan. Hot oven. Walk away.

The plate is where this goes from a side dish to a moment. Greek yogurt spread across the bottom of a wide plate, cold and creamy and slightly tangy. Carrots arranged on top, still warm, glossy from the roast. Chiffonaded mint scattered over everything. Crushed pistachios for crunch and color.

It looks like a restaurant plate. It took you twenty-five minutes including the plating.

Ingredients

  • 2 bunches heirloom carrots, tops trimmed, scrubbed

  • ¼ to ⅓ cup good olive oil

  • 3 tbsp harissa paste (or 1½ tbsp harissa spice blend)

  • ¼ cup honey

  • Kosher salt

  • 1 cup full-fat Greek yogurt

  • About 20 fresh mint leaves, chiffonaded

  • ¼ cup roasted pistachios, roughly crushed

Steps

1. Preheat and prep.
Preheat oven to 425°. Leave small and medium carrots whole. Cut any very large ones in half lengthwise. Spread across one or two sheet pans in a single layer — don't crowd them or they'll steam instead of roast.

2. Make the slurry.
Whisk together the olive oil, harissa, and honey until combined. Season with a pinch of salt. Pour over the carrots and toss to coat evenly.

3. Roast.
Roast 20 to 25 minutes until the carrots are tender, caramelized at the edges, and sticky. They should have some color and char. That's correct.

4. Plate.
Spread the Greek yogurt across the bottom of a wide serving plate or platter. Arrange the warm carrots on top. Scatter the chiffonaded mint over everything. Finish with the crushed pistachios.

Serve immediately while the carrots are still warm against the cold yogurt.
